  • Mustard: 2 tablespoons optional, for slathering

Method
 

  1. Prepare the Bologna: Slice the bologna into thick rounds, about 1 inch thick. For a whole bologna, make shallow diagonal cuts on the surface.
  2. Season the Bologna: Apply mustard to the bologna slices (if using). Generously coat with the rub spices, ensuring all sides are covered.
  3. Preheat the Smoker: Set your smoker to 225°F (107°C) and add your choice of wood chips.
  4. Smoke the Bologna: Place the bologna in the smoker. Smoke for 2 to 3 hours until the internal temperature reaches 165°F (74°C).
  5. Rest and Serve: Allow the smoked bologna to rest for 10-15 minutes before slicing. Serve with BBQ sauce and pickles.
